Gul Poli

Gul Poli is a sweet flatbread or paratha specially prepared on the day of ‘Makar Sankranti’, the harvest festival. ‘Gul’ ‘Gur’ or ‘Jaggery’ is the main ingredient in this traditional sweet recipe. In Maharashtra and Karnataka, Makar Sankranti is celebrated by preparing the special Foods using the freshly produced crops and vegetables of the season.

According to Ayurveda consuming Sesame Seeds and Jaggery on Makar Sankranti is very beneficial to health. That’s why we say in Maharashtra ‘tilgul ghya goad goad bola‘ and in Karnataka, ‘ellu bella togondu olle matadi’ which means have sesame and jaggery in this season and let’s forget all the ill feelings of the last year and promise to maintain harmony for the coming year.

How To Make Gul Poli On Makar Sankranti

Let’s begin with the Ingredients

Ingredients used For making Gul Poli

For making the dough

  • 2 cups Whole Wheat Flour
  • 1 cup All Purpose Flour (Maida)
  • 1 tablespoon Oil hot
  • Salt to taste
  • Water as required

For making the filling

  • Jaggery: 1 and a half Bowls
  • Gram flour (besan): 1-1/2 tablespoons
  • tablespoon Ghee: 1-1/2 tablespoons
  • Poppy seeds: 1 tablespoon
  • 1 teaspoon Cardamom Powder (Elaichi)

Preparations For Making Gul Poli

Dough:

  • Mix the wheat flour, all-purpose flour, and salt in a large bowl.
  • Add water part by part and knead a semi-hard dough.
  • Apply 1/2 tea spoon oil on the dough and keep it aside covered.

Filling Or Saaran:

  • Grate the jaggery with a grater.
  • Transfer it to a broad vessel.
  • Add cardamom powder to it and mix well.
  • Heat the oil and pour it on grated jaggery and mix.
  • Heat a pan and add 2 teaspoons ghee to the pan, add the gram flour. Roast on low heat till it changes its color and aroma comes out of it. Turn off the heat, and transfer it to the grated jaggery mixture.
  • Add poppy seeds and again mix to form a thick filling.

Making Gul Poli

  • Make two small lemon-sized balls of the dove at a time.
  • Sprinkle some flour on the rolling surface.
  • Roll both dough balls to the size of a poori.
  • Take the jaggery filling of the same size as the dough ball.
  • Place the jaggery filling on one puri and cover it with the other puri. Press gently but do not close the edges.
  • The procedure is exactly the same as a stuffed paratha.
  • Roll out the ball to a thin circular shape.
  • Meanwhile, heat the tawa on medium heat. Place the rolled Gu Poli on it and roast one side on medium flame. Apply oil or ghee as required for roasting.
  • Then turn the poli and roast the other side. Roast till both sides become golden brown.
  • The Gul Polis are usually soft while roasting, they are crisp up after they cool down.
  • Repeat the procedure with the remaining dough.
  • Serve the Gul Poli with ghee and enjoy.

Makar Sankranti

Makar Sankranti is celebrated in the month of January when the Winter season begins to gradually wane in Maharashtra and Karnataka.

Makar Sankranti indicates the arrival of the new harvest season. Sankranti is celebrated all over India. The festival is known by a different name in other parts but the excitement of celebrating the festival is the same.

In Maharashtra Makar Sankranti, Makar Sankramana in Karnataka, Uttarayan in Gujarat, Khichri in Uttar Pradesh, Lohri in Punjab and Pongal in Tamil Nādu.

Notes and Tips

Usually, Gul Poli is prepared with white sesame or Til. It is called as Til Gulachi Poli.

I have not used sesame in this recipe

While rolling poli I used two dough balls and one jaggery ball. But you can make it in the same way as Puran Polis are made.

While roasting polis Jaggery melts and comes out, it is very normal.
