What is Chayote Squash Stir fry?

In chayote squash stir fry, the chayote is peeled, sliced, and cooked in a blend of spices such as cumin, turmeric, and green chilis, along with onions and garlic. The result is a flavorful and nutritious vegetable side dish that can be served with rice, roti, bread, or any other main course.

Ingredients:

  • 2 medium-sized chayote squash
  • 2 -3 tablespoons of vegetable oil
  • 1 teaspoon cumin seeds
  • ½ teaspoon mustard seeds
  • 1 teaspoon Bengal Gram/Chana Dal
  • 1 teaspoon Urad Dal/Split Black Gram
  • 1 medium-sized onion, chopped
  • 2-3 Green chilis
  • 2-3 Red Chilis
  • 1/2 teaspoon turmeric powder
  • Curry leaves one string
  • ½ teaspoon sugar(optional)
  • Salt, to taste
  • Fresh cilantro leaves/Coriander for garnish Freshly grated coconut

Instructions:

  1. Peel the chayote squash, remove the seeds and dice them into small cubes.
  2. In a large skillet or pan, heat the oil over medium-high heat. Add mustard and cumin seeds and let them sizzle for a few seconds.
  3. Add urad dal and chana dal and fry the till they turn pinkish. Add curry leaves.
  4. Add chopped green chilis, red chilis and chopped onions and saute them for a few minutes until the onions are soft and translucent.
  5. Add the diced chayote squash and mix well with the onions and spices.
  6. Add turmeric powder, sugar and salt. Mix everything well.
  7. Cover the pan and let the sabzi cook for about 8-10 minutes, stirring occasionally. Add freshly grated coconut and coriander leaves. Again mix everything well and cook until the chayote is tender and fully cooked.
  8. Once the sabzi is cooked, remove the lid and cook for another 3-4 minutes to reduce any excess liquid.
  9. Garnish with fresh coriander/cilantro leaves and grated coconut and serve hot with rice, roti, or any other main dish.
