Tomatoes are very commonly used vegetable. They are used with almost every vegetables, Used in curries, Soups, Salads and also for garnishing. 
Tomatoes can be consumed  raw and cooked form. But, when eaten raw tomatoes have many health benefits. Tomatoes are the major dietary source of the antioxidantlycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer. They are also a great source of vitamin C, potassium, folate, and vitamin K.

Benefits of Tomatoes

1. Eating tomatoes daily will ensure  in better functioning of our body.
2. The skin of tomatoes are rich in phytochemicals which are important for our body. So consume tomato with skin always.
3. tomatoes release more lycopene when cooked. (Lycopene is a cancer-fighting antioxidant) 
4.Tomatoes have substances called lutein and zeaxanthin that may help protect your eyes from the blue light made by digital devices like smartphones and computers.

Tomato Bhat

Let’s begin with Ingredients:

1. Rice  – 2 Bowls (Any)
2. Tomatoes  – 4 Big sized or 6 small
3. Onion  – 2 medium
4. Whole masalas  – 
a. Cardamom – 4 (Elaichi)
b. Cinnamon – 1 inch (Dalchini)
c. Pepper corns – 5-6 (Kali Mirch)
d. Cloves  – 5-6 (Long or lavang)
e. Caraway seeds – 1/2 Tea Spoon (Shahi Jeera)
f. Cumin Seeds – 1/2 Tea Spoon (Jeera)
g. Poppy seeds – 1 Tea Spoon ( Khas Khas)
h. Bay leaves – 3 (Tez Patta)
5. Red chili powder – 2 Tea Spoon
6. Salt – As per taste
7. Sugar  – 1 Tea spoon (optional)
8. Coriander leaves – 4 spoons 
9. Curry leaves  – 10-12 (Kadi patta)
10. Oil or Ghee –  3 Table spoon
11. Green Chilis  – 2


Method

Wash the rice thoroughly, drain the water and keep it aside.

Wash tomatoes and chop them finely. Slice the onion into long stripes. Wash the coriander leaves and chop finely.

Take a cooker  and add oil or ghee to it. Put all the whole masalas to it when oil is warm. Sauté them for 1 min.

Then add onions and fry them till translucent. Add green chilies. Add tomatoes and fry till they are soft and mushy.

Add chili powder, sugar and salt and sauté for 1 minute.

Add washed rice and fry till the rice becomes dry and crisp. Add four and half bowls of water and bring it to boil.

Close the lid and cook for two whistles.

When the pressure is gone give it a good mix so that all the ingredients mix well. Serve hot with and raita and papad.


Tomato rice is best for lunch box. Or when you are short of vegetables and no time for a detailed meal Tomato rice will be the best option.

    Hey mast receipe.
    Remembered me of good old days of old dwr house, when you used to cook, especially on Sundays and venture to mylaralingeshwar temple.
    Those days are gone.
