Broken Wheat is a coarsely ground cereal with various health benefits. Broken wheat commonly is used to make upma, porridge and in desserts such as pudding. Naturally, low in gluten and has a low glycaemia index. Highest mineral, antioxidant and fiber content of any wheat flour.


Daliya Dosa Recipe | Broken Wheat Dosa | Bulgur Dosa Recipe 

Dosa is one of the popular breakfast recipe in South India. There are so many healthy and Proteinrich dosa recipes. Daliya dosa is one of the healthy breakfast option any time. Daliya means broken wheat or bulgur. This dosa tastes really good and also protein rich because of presence of broken wheat in it.


Ingredients

For Dosa Batter:

  1. Daliya or broken wheat: Two bowls
  2. Urad Dal: One bowl
  3. Thin Poha: Half bowl
  4. Salt: As per taste.

For potato Bhaji:

  1. Potato: 5-6 medium or as required
  2. Green chilis: As per the spiciness required
  3. Onion: One big
  4. Coriander Leaves: 3-4 table spoon chopped
  5. Salt: As per taste
  6. Tempering: Oil, Mustard, Jeera, Haldi, Hing, Urad dal and kadi patta

Preparation

Dosa Batter

Step 1

Wash broken wheat two to three times till the water is clear and soak in water for four hours. Wash Urad dal also and soak it separately for four hours. Wash and soak thin poha for five minutes or just before grinding.

Step 2

Drain the water from soaked broken wheat or daliya and dal. Grind them one by one to form a fine paste. Add thin poha while grinding broken wheat. Transfer the batter in to a large vessel and give it a good mix. Cover the lid and leave it for fermenting for 8-10 hours.

Step 3

Once the batter is fermented add salt as per taste and mix properly. Adjust the batter consistency by adding water if required.

Please Note: As daliya is highly fibrous, batter becomes too sticky which is very normal.

Potato Bhaji:

  • Boil potatoes until they are soft. Peel the skin, mash and keep them aside.
  • Cut onion and green chilis.
  • Wash coriander leaves and chop finely.

Daliya Dosa:

  • Heat the tawa and apply oil.
  • Pour one ladle of batter and spread evenly.
  • Roast the dosa for two minutes and flip it and roast the other side.
  • Repeat the procedure for rest of the batter.
  • Serve hot with chutney, sambhar and Potato bhaji.

Potato Bhaji:

  • In a kadai or pan put three teaspoons of oil and add Urad dal and tempering ingredients. Splutter them.
  • Add chopped green chilis and onion and sauté them till onions are translucent.  
  • Then add mashed potatoes, salt and sugar. Mix all properly.
  • Cover the lid and cook for two minutes.
  • Garnish with chopped coriander leaves and keep aside.

Heat the tawa and apply oil on it. Pour a ladleful of dosa batter and spread evenly.

 Flip once the dosa is roasted and cook other side.

Boil potatoes, Chop onions, Green chilis and Coriander leaves.

In a kadai put three tea spoons of oil and add Urad dal along with tempering ingredients and splutter them.

Add green onion and green chili saute them.

Add turmeric powder, salt and sugar. Mix it well.
