Akki Rotti is one of the famous breakfasts in Karnataka. Akki means rice and Roti means flatbread. In other words, Akki rottis are flatbreads made with rice flour and mix veggies. You can also call them as rice flour roti or rice thali peeth.


Usually rotis are rolled, but these Akki rotti dough is patted with hands. A plantain leaf (Baale ele or keliche pan) is best to pat these rottis. moist cotton napkin, butter paper, parchment paper or aluminium foil can be used to pat and then transferred to tawa for roasting. 


For making Akki Rotti recipe Karnataka style | Akki Rotti recipe for Breakfast I personally prefer plantain leaves. But I do not get them handy here at my place, so I have used aluminium foil.


I have shown two methods of patting the dough one directly on tawa and the other on aluminium foil. You can make them according to your convenient method. 


As you can have Akki rotti for breakfast or lunch, you can make it still healthy by adding veggies of your choice to the dough. In this recipe, I have added only onions and coriander leaves. Freshly grated coconut is also good to add.


Other veggies you can add are cabbage, drumstick leaves, bottle gourd, spinach, fenugreek leaves, cucumber and amaranth. But these rottis taste excellent with dill leaves or shepu bhaji or sabbasige soppu.


Ingredients

  1. Rice flour: Two bowls
  2. Onions: Two medium
  3. Coriander leaves: A handful
  4. Green chilis: 4-5 
  5. Kadi Patta: 7-8 leaves (optional)
  6. Salt: As per taste
  7. Hing: One pinch
  8. White sesame: One tea spoon
  9. Jeera: One tea spoon
  10. Sugar: One tea spoon (Optional)
  11. Water: As required to knead the dough.
  12. Oil: Four tea spoons


Preparation.

  1. First, finely chop onions, coriander leaves, kadi patta and green chilis.
  2. Second, in a mixing bowl add two bowls of rice flour. Add salt, sugar, hing, jeera and white sesame. Mix it well.
  3. Third, add chopped vegetables and mix them squeezing. 
  4. Finally, knead the dough by adding water part by part. The dough should not be very tight or loose. Make the consistency for easily patting the rottis.
  5. You can rest the dough if you wish, otherwise start making rottis immediately.

Methods -1 for making

  • As I said earlier using plantain leaf for patting roti is best option. As I didn’t get them I have used aluminium foil. 
  • Take a medium ball sized dough, apply oil on foil and start patting rotti using your palm and fingers.
  • Make as thin as possible for crispy rotti or else you prefer soft one then keep it little thicker. 
  • Place the tawa on gas and heat it, keep the flame medium and transfer the patted rotti on tawa. Slowly remove the foil.
  • Cover the lid and cook for two minutes. The flip and cook the other side. Apply oil or ghee. 
  • Serve hot with chutney or any side dish you prefer.

Methods -2 for making

  • Instead of using plantain leaf or foil or paper you can pat rottis directly on tawa itself.
  • Take medium ball sized dough, apply oil on tawa and pat the rottis using your palm and fingers.
  • Put the tawa on gas on medium flame. Cover the lid and cook for two minutes. Then flip the rotti and cook again till crisp.
  • Prepare akki roti using the method which you prefer.  This second method takes longer as you have to wait for the tawa to cool down.
  • Otherwise, you can use two tawas side by side to make rotti. In this way you can alternate between two tawas.

Take two bowls of rice flour in a mixing bowl. Add jeera, white sesame, hing and salt.

Add chopped veggies to rice flour.

Knead the dough adding part by part water.

Take medium ball sized dough and pat it on foil or leaf.

Place the rotti on tawa and slowly remove foil.

Cover the lid and cook for two minutes.

Take medium ball sized dough and apply oil to tawa. Pat rotti on it.

Place the tawa on gas and cover with lid and cook.

Tips and Notes:

  1. As I said you can also use finely chopped fresh dill leaves to this Akki Roti.
  2. You can make akki rotti from left over rice also. Add all the ingredients to left over rice and knead it to make a soft dough.
