Karnataka Style Hurali Kalu Saaru and Usali Recipe

Horse gram
Horse gram is grown in most part of the India as well as in Malaysia, Sri Lanka, the West Indies, and elsewhere. It is consumed as a whole seed, as sprouts, or as whole meal in India, popular in many parts of India.
Among the other lentils horse gram is very beneficial pulse. Horse gram is black in colors and used mostly in South India. Horse gram is highly nutritious and contains a lot of calcium and iron, which are beneficial for health. Horse gram is effective to enhance the immune system. It is rich in vitamin C that helps prevent infections.

Karnataka Style Hurali Kalu Saaru and Usali Recipe is a delicious curry and Usali made with Horse gram or Kulthi or Kulith lentils is a perfect side dish for your lunch. This recipe is from Karnataka and Horse gram lentil is used in many of our dishes.
Hurali Saaru is also called Huruli bassaru or Horse gram Rasam is a two-in-one recipe. Very good combination for Rice, Roti, Chapati and Ragi mudde. The cooked horse gram stock or kattu is used to make rasam and the cooked horse gram is used to make usali. In Karnataka, there are many different types of bassaru and this recipe is one among them.
Ingredients
Hurali Usali/Horse gram Usali
- Horse gram/Hurali/Kulith: One bowl
- Onion: One big
- Red Chili Powder: One tea spoon
- Masala Powder: One and Half tea spoons
- Salt: As per taste
- Jaggery: Two tea spoons
- Coriander Leaves: Half Bowl
- Freshly grated coconut: Four tea spoons (Optional)
- Tempering Ingredients: Mustard, Jeera, Hing and Haldi powder
Hurali Kattu Saaru/Horse gram Rasam
- Hurali Kattu: Two bowls
- Ghee: Four tea spoons
- Dry Red Chili: Two
- Rasam Powder: Two tea spoons
- Kadi Patta: 7-8 leaves
- Jaggery: One tea spoon
- Tamarind Water: four tea spoons
- Salt: As per taste
- Coriander Leaves: Four tea spoons
- Tempering Ingredients: Mustard, Jeera, Hing and Haldi powder
Method
Hurali Usali/Horse gram Usali
- First, wash Horse gram thoroughly, soak them in plenty of water for half an hour.
- Next drain the water and transfer the soaked horse gram into pressure cooker, add sufficient water and cook for two whistles.
- When the pressure is gone drain the water from cooked horse gram, keep the stock aside.
- Again, transfer the half-cooked horse gram to pressure cooker and add water. Cook for two whistles. This is for getting more stock for the rasam.
- Drain the water from the cooked horse gram when the pressure is gone. Transfer the stock to the previously stored bowl.
- In a kadai, add two spoons of oil. Once it is warm add tempering ingredients and splutter them. Add kadi patta and fry them.
- Then add finely chopped onions and saute till translucent.
- Before adding cooked horse gram to this, crush them with a grinding stone/Sil batta/ Gundu kallu/ varavanta.
- Then add crushed horse gram to the kadai and add very little water. Give it a good mix and cook for two minutes.
- Then add chili powder, masala powder, jaggery and salt. Again, mix well and cook for five minutes on medium flame.
- Garnish with chopped coriander and grated coconut.
Hurali Kattu Saaru/Horse gram Rasam
- In a deep pan add two spoons of ghee. Once it melts add tempering ingredients and splutter them. Add kadi patta and red chili fry them.
- Then transfer the Hurali kattu of horse gram stock to the pan. Let it boil.
- Then add tamarind water and jaggery. Cook for two minutes.
- Add salt, rasam powder (Or normal masala powder available at your home) and boil it for five minutes.
- Garnish with coriander leaves and serve hot with rice. Or it can be consumed as soup also.

Wash and soak Horse gram in water for half an hour

Drain the water and pressure cook for four whistles. Drain the stock.

Drain the stock and keep aside.

In a kadai add oil and tempering ingredients and chopped onions. Saute them.

Add red chili powder, masala, jaggery and salt. Add little water and cook.
Usali |
For making Horse gram rasam, in a pan add two spoons of ghee

Add tempering ingredients, kadi patta and red chili and fry them.

Add horse gram stock or Hurali kattu. Add tamarind water. Then add salt, jaggery, rasam powder and boil for 5-10 minutes. Garnish with coriander leaves and serve hot.

Health Benefits of Horse Gram/Hurali
Like other legumes, Horse gram is also high in protein and fiber, which are essential for healthy blood sugar levels and decrease appetite.
Horse gram have many health benefits is very good for diabetics. It is rich in iron content so ideal for women’s who suffer from iron deficiencies.
It also contains a variety of other essential vitamins and minerals, including iron, phosphorus, and vitamin C.
Horse gram must be used regularly in your diet especially in winter and monsoon.
Avoid Horse gram if you have
Hyperacidity: it increases the acidity.
Gastric trouble: Horse gram may cause a bloating sensation as it is rich in carbohydrates.
Gout: The people suffering from gout should also avoid consuming horse gram.
Horse gram is indeed a superfood because of its nutritional values and health benefits. But consuming excessive quantities of this legume may lead to some side effects also, when used cautiously it is highly recommended to include horse gram in your regular diet.
